Isolation and Characterization of Bioactive Peptide from Sprouted and Non Sprouted Seeds of Finger Millet: A Comparative Study

Abstract

Finger millet, a Poaceae plant, is known for its therapeutic and dietary benefits. It contains phenolics, flavonoids, minerals, proteins, carbohydrates, and lipids. The germination process protects grains from fungus and affects biochemical transformations, increasing the nutritional value of malted goods. During the sprouting process, it causes the growth of - amylase. Bioactive peptides have gained prominence as potential drugs due to their multifunctional activities. Bioactive peptides obtained from synthetic and animal origin make them costlier, so going for plant origin is the best way of getting the proteins and peptides that are economical. Bioactive peptides were isolated by alkaline extraction and isoelectric precipitation methods. Preliminary identification and quantification are performed by UV Spectroscopy, XRD, DSC, and SEM. The antimicrobial activity was performed as a functional analysis. Biopharmaceutical aspects studied were pka determination. In this study, we found out and proved that sprouted finger millet has a large quantity of bioactive peptides compared to non-sprouted finger millet. The sprouting process increases the nutrient valueof finger millet seed powder.
