Abstract

Anthocyanin is an organic chemical compound that causes red, purple, blue, and black colors in plants. Anthocyanin is usually used as a natural coloring agent that is safe to be consumed, used as natural color-based indicators, and used as an antioxidant to prevent free radicals that can prevent aging, cancer, and degenerative diseases. Anthocyanins can be found in various plants, such as purple sweet potatoes, purple cabbage, beetroot, mangosteen, roses, as well as rosella. Each commodity has different types and characteristics of anthocyanins.
