In the catering industry, control dishes are samples of the various dishes distributed to consumers. Their sampling is compulsory and is exclusively reserved for the official control service in the event of suspected collective food poisoning. This study was carried out on different samples (control dishes, ready-made meals). The samples were taken at the hygiene laboratory in the wilaya of Constantine, with the aim of checking the microbiological quality of the control dishes by enumerating the various contaminating germs. The analyses revealed that all the dishes were satisfactory. All but two dishes were contaminated with E.coli and mesophilic aerobes.
