SE with a content of 1.91±0.11% solids was found to contain TPC of 265±11 mg GAE/g, TFC of 72±5 mg QE/g, and AOA of 22.5±3.0 mg/ml. We developed microcapsules based on WPI, which were dried using FDM and SDM. The effect of pH changes during incubation WPI/SE was studied. The yield of encapsulate varied 94.72-96.01% (FDM) and 68.32-72.08% (SDM). An increase in the concentration of SE reduced the encapsulation efficiency. A change in pH during incubation increased the efficiency by 19.3% (FDM) and 14.5% (SDM). The results from UV-Vis and FTIR spectroscopy showed the formation of complex structures WPI/SE. SEM images revealed that the morphology of the surface of the encapsulated material varies depending on the chosen drying method. The drying method has a minor effect on AOA and thermal stability of samples, the incubation process during which the resulting encapsulated materials are formed makes the most significant contribution.
