Climate hazads have negative consequences on the food and nutritional balance in Sahelian régions. Criquets (Schistcerca gregaria Forskal 1775), effectively contribue to the food and nutritional security of the populations, but the risks of poisoning is noticeable in Ati, the head quater of district of Batha. The capture techniques, technological processing, and the risks associated with Grassshoppers consomption were the main objectives of this study. The participative survey, field investigations and littérature review enhanced to the identification of practices related to criquets trade chain in Batha. The result reveled taht maried women (74.44%) aged between 25 and 35 years, followed by single women were the main actors of the criquets chain value. Generally, no etucated (62.20%), they are involved in the capture, technological processing, marketing and even the consomption of the products. The massive use of chemical pesticides (55%) for capturing grasshoppers has a sereous dangers on the community health. Though, some actors use (45.5%) hot and salty solution (salt + bicarbonat sodium) as the means of technological treatment of the products. This practice has an immediate consequences as environmental pollution, skin irritation, stomac pain and diarrhea in consommers. Futher more, carcinogenic effects, imminodepression, endocrin disrupture, skin and liver toxicity and congenital anomalies are considered as the negative long-termes effects of pesticide résidus ingestion. To escape these risks, rational use of fire bands (76%) was requested. However, biological solution seems as the best ways of providing pesticide for grasshopper hunters without any occurance of community problems of health. Therfore, to avoid fake presumption related to food security, physiochemical analysis of the criquets and blood dosage of toxines in consumers could necessary for the right décisions making
