Abstract

Enzymes are produced by a wide range of living things including bacteria, fungi, plants and animals. Fungal enzymes are preferred over other microbial sources owing to their widely accepted Generally Regarded As Safe (GRAS) status. Amylase is one of the most widely used enzymes in the biotechnology industry with a global market of over $4 bn as at 2015.
